Who Can Benefit from Gluten Freedoms?

  1. Celiac Disease – An autoimmune response to gluten, a protein in wheat.  This means that every time you consume gluten, your body attacks its small intestines, damaging the villi, and therefore causing a decreased absorption of nutrients, which then leads to vitamin deficiencies.  Without nutrient absorption, parts of your body begin to malfunction.  In order to alleviate this autoimmune response, you cannot eat gluten, or anything that has come into contact with gluten.

Autism – A gluten-free (and casein free) diet has been recognized as an alternative treatment for people with autism to reduce some of the symptoms.

Gluten Sensitivity – An immune response to gluten, a protein in wheat, with similar symptoms to celiac disease.  (Often people with gluten sensitivity are diagnosed with Irritable Bowel Syndrome (IBS)).  In order to properly treat this condition, you must adhere to a gluten-free diet.

Wheat Allergies – An immune response to wheat that is often fairly immediate.
